The cultivation of olive trees in Mallorca has been part of its landscape and culture for centuries. The history of olive oil in Mallorca dates back to the times of the Phoenicians and Greeks, who introduced the olive tree to the Iberian Peninsula, from where it later reached the island.
During the Crown of Aragon era (13th century), Mallorcan oil was already being exported to North Africa, and from the mid-15th century, the Port of Sóller became one of the main export hubs for this valuable product. During the 16th century, olive cultivation grew significantly, and production techniques were perfected, making it the main source of wealth for many estates in Mallorca, which had their own oil mills.

The expansion of olive groves occurred mainly in the Serra de Tramuntana, where the stone terraces and ancient olive trees create a unique landscape, now a UNESCO World Heritage Site. Between the 17th and 19th centuries, Mallorcan olive oil was not only a staple food for the island’s inhabitants but also a highly valued product for trade and export.

Extra virgin olive oil from Mallorca is known for its richness of flavors, influenced by the variety of olive and the time of harvest:
Mallorcan variety: Smooth and sweet oils, with notes of ripe almond and green apple.
Arbequina: Fresh and fruity oils, reminiscent of green fruit and freshly cut grass.
Picual: Intense oils, with a hint of bitterness and spiciness, and a high concentration of antioxidants.

Depending on the time of harvesting, the oils can have a sweet or fruity profile, offering a wide range of flavors.
